Happy Thanksgiving!!
This year I have plenty to be thankful for including my family, my health, my friends, my job, this blog and Derek.
I am very thankful to lead the life I do and I wouldn’t change any of it for a second.
What are you thankful for this year?
Having a sister who is willing to wake up at 6:00am on Thanksgiving to run with me is a biggie on my list of thanks.
Unfortunately there were no Turkey Trots in out small hometown this morning, so my sister and I decided to create our own Thanksgiving Day 10k.
We set out on a simple out and back route and were able to play catch up. It had almost been a month since I last ran with my sister and I really missed her company!
We really booked it on the run and ended up completing out makeshift 10k at an average pace of 8:50. It felt great!
Can’t wait for that half marathon on Sunday now!
Last night I had prepped the dough for my Vegan Pumpkin Raisin Scones – only it wasn’t vegan as all my parents had was real butter. While my sister and I were on out run, my Dad put the dough in the oven to bake.

He did bake them a tad too long and they were slight burnt, but still very tasty.

I had one scone with a smear of apple butter.

And a side of grapes.

We are scheduled to arrive at my aunt & uncle’s for Thanksgiving around noon, which means I need to get going on roasting my veggies. Did I mention there will be 50 people at our family gathering? 50 people! It should be fun!
