When I posted the photo of my office Treat Week goodies this afternoon, I wasn’t surprised to see so many comments referring to the Pumpkin Chocolate Chip Muffins right smack in the middle of the photo. I wanted to ensure all my faithful readers that of course I didn’t ignore the pumpkin muffins – I was merely saving them for my afternoon snack.

I had grabbed two of the mini muffins this morning knowing they would make a wonderful addition to my afternoon yogurt.

I was right. They made a fab addition! Delicious!!

My dinner tonight was randomly thrown together using what ingredients looked appealing in the fridge.

I started by baking 1/2 an acorn squash in the oven at 415 for 30 minutes.

And while the squash I was baking in the oven I got started on the stove top with some onion, broccoli, & tofu.

Cooked Cous Cous with Raisins



Once the flavors came together I topped the acorn squash with the cous cous mix.

It was quick, it was easy, and it was good.
In honor of Katy and Michelle’s Vegan Week I have agreed to give up dairy, meat, honey, and all other animal product for the course of the day tomorrow. That’s right I am going vegan for the day. Surprised? Yeah, me too.
I am not usually one for labels or putting restrictions on my diet. I’ve found the moment I tell myself I am not allowed to have something then its automatically all I can think about. Hence why eating in moderation works for me.
However, I thought it would be fun to see if I could really go vegan for the day. But, if you see me gorging on ice cream on Friday because I wasn’t ‘allowed’ to have it on Thursday – don’t say I didn’t warn ya!
I’ve been struggling to plan my meals for the course of the day tomorrow, but as I was eating my dinner tonight it hit me that the meal was completely vegan! This just goes to prove my point even more that I don’t need to have the ‘vegan’ label to enjoy unintentional vegan meals.
Of course Vegan for the Day doesn’t actually begin until tomorrow which meant I was still able to enjoy my non-vegan dessert from one of my favorite bakers who sent me a surprise package today!



Reeses Peanut Butter Cup Blondies!!!


Amanda has sent me several packages over the last year filled with her delicious blondies and brownies. In that same time she has started her own baking business. I was happy to see Amanda’s latest business flyer in my goodie box.

Um I totally can not have sweets in the house. I just ate two vegan PB cups I made I only needed one, but it was glaring at me!
Being vegan isn’t difficult I try not to force myself to eat a way, but I do try to eat vegan 98% of the time. I think you’ll find you enjoy it once you try
Although nothing wrong with meat!

sweets are everywhere I look. Someone brought in a Vegan sweet poato pie, I was surprised how good it was. I need to try my hand at vegan pies! Eating a slice with almond milk right now!

That blondie sounds divine! And that’s an awesome dinner. I’m sure you’ll be fine going vegan for a day. It’s not very hard so long as you watchout for pitfall items. You might never think it but some things like flavored nut butters or specific sauces have milk products in them.

I know, I have a commitment issue. that’s why I don’t plan meals and decide what to eat 30 min before!

Just wondering when you roast the acorn squash do you put any olive oil or anything on it or do you put it in as is? I have an acorn squash I have been meaning to use but I have never cooked with one before.

Nope, I just roast it plain! I am a big believer in not adding extra oils when you don’t need them.

Ummm.. I’m hungry now. Hahaha. All of the food looks amazing!! I really like the vegan meal. I have some tofu in my fridge, maybe I’ll try something similar.
