Frittata Soup

I wish I could take credit for this idea, but then I wouldn’t be serving the lovely Sarah at Suite Apple Pie any justice. It’s her creative mind that came up with the concept for Frittata Soup and it was her blog that I discovered it on well over a year ago. The idea had been lost for a while, but after meeting Sarah at the Foodbuzz Festival this weekend I suddenly remembered it and have since been determined to try it ever since.

The concept is so easy – take left over frittata, add it to vegetable broth, heat, and serve.

This was a great way of re-inventing left overs into another fun and unique meal. Plus, the hot soup was just what I was craving with the cool and gloomy weather outside.

With my soup I had a piece of Pumpkin Cornbread.

I believe the bread was even better today than yesterday. I am already planning how to incorporate another piece to my meal tonight. So good!

Christmas Cookies…

I can’t remember if a PR company had told me they were sending me a copy of the Betty Crocker’s Christmas Cookies mini magazine or not, but I was pleasantly surprised to see it in my mail box today.

I have been thumbing through the magazine all morning and all the beautiful, delicious recipes have me in the Christmas baking spirit!

Is it too early to start frosting Christmas sugar cookies? ;)

    I actually made Halloween sugar cookies so I would have an excuse to frost and decorate in October :-)

    It is never to early to make Christmas Cookies! I make them all year round!

    I feel like I think about Christmas cookies all year round! I LOVE to bake, and Christmas is perfect for it. I can’t wait to dive in to all the wonderful cookie recipes I’ve found recently :)

    You should make some croutons out of your cornbread for a fall themed salad! Or make a panzanella style salad?! So good!

    Not too early at all! You need to test them out before you share it, right? ;-)

    That soup looks really good. So creative. Usually I just use leftovers as is.

    Um never too early for sugary sweets? You have to PRACTICE before Christmas so you better get on practicing baking the recipes for any parties/events you may have coming up. ;)

    It’s not too early for Christmas cookies! But if you’re still debating, you could always make a few and eat them really fast before anyone sees you ;-)

    never too early for christmas cookies :) You know what though? i’ve never actually made christmas sugar cookies….like rolled out sugar cookie dough and use cookie cutters. this year might have to be my first :)

    yay! i defs think it is too early to start making christmas cookies. i would wait until after thanksgiving to finally get into the christmas spirit :) that is what i do!

    Maybe, but it’s not too early for Thanksgiving cookies. ;) Do they make Thanksgiving cookie cutters?

    Oh man, I MUST find the recipe for those almond cappucino bars!!

    I have to try the pumpkin cornbread too — did you add anything to the top? It almost looks like you have a streusel on top…
