Sometimes simple dinners are the best.

I was pretty busy at work this afternoon and didn’t realize I was hungry until 4:00, which is a little later then my normal afternoon snack time. I had packed a rather large snack of Peach Chobani and Oatmeal Quaker Squares.

The snack was perfect and left me pretty full. So full in fact that I did not have my normal large appetite for dinner. I stood in front of the fridge for a good 10 minutes trying to decide what to eat, but all I wanted was something simple and easy, so I grabbed a few fresh items and got to work.

I steamed some fresh Broccoli and Carrots and covered them with pasta sauce.

I know it sounds strange but I LOVE pasta sauce on top of steamed veggies. Yum!

I had inspiration from Sarah for this wrap.

The ‘Crack’ wrap contained WildWood Indian Spice Hummus, Swiss Cheese & Jalapenos. Very gooey and yummy!

Like I said simple always makes the best dinner and this is exactly what I needed.

For dessert I had the last two mini tarts Derek had brought me from Greenwise.

Derek knows me very well showing up at my door on Friday with Mini Tarts and half a Pretzel. Food is so much better then flowers. :)

Now I’m officially all packed and ready to go!

I tried really hard to pack as light as possible. I limited the number of pants I packed, am only bringing two pairs of shoes and one purse. Honestly the thing that took up the most room in the suitcase was my running gear. LOL

I also made sure to pack a lot of healthy snacks.

In the bags are premixes of cereal and I put little notes in with what is in each bag for blogging purposes. :)

I think that’s it. I’m staying at Caitlin’s tonight as she lives minutes form the airport and has kindly offered to drop me off for my early flight. Thanks Caitlin!!!
