Similar, but Better

Today’s lunch was very similar to the one I ate on Tuesday.

It had Yellow Squash and Cucumber with a tablespoon of Hummus

And a nice juicy Baby Pickle on the side

But what makes this lunch better then the other is that inside the delicious Flat Out Spinach Wrap is a nice heaping helping of last night’s ‘Cheesy’ Chickpea Cauliflower Casserole.

The left overs totally made that wrap! The left over casserole took to the role of wrap filling rather nicely and made my lunch very enjoyable. If you made this dish and have left overs I highly suggest rolling it into a wrap the next day. Yum!

Midmorning I brought out a Pistachio Larabar to snack on.

Though I have enjoyed the pistachio flavor in the past, this one was a bit meh to me and I ate half before discarding the rest. Oh well.

Has anyone else been paying attention to the Peanut Butter Salmonella scare out there? Apparently they traced the salmonella back to King Nut which is a manufacturer whom mainly sells their PB in bulk to schools and other organizations. So, all of our precious Peanut Butters are safe.

However, I read today that Kellogs is recalling all of their Peanut Butter crackers until an investigation is complete in their peanut factories. So you may want to hold off on munching down on any Kellog crackers – which includes Austin and Keeblers  Brands – just to be on the safe side. :)

    I love wraps and yours looks fantastic! I’ve heard about the samonella scare and how they linked it to pb. I’m so glad that my Jif and PB & Co weren’t affected! :)

    My heart skipped a beat when I heard about the PB scare. Seriously, at the very moment, I have a 5-lb jar of peanut butter sitting in the pantry. (I think it’s okay though.)

    Yummy, yummy wrap! I should try making those more often.

    How do you keep all that filling from falling out while you’re eating the wrap? I always make such a mess :) But that’s the half the fun, I guess!

    Your wrap is making me hungry!!! I heard about the PB scare – but I think (hope) I’m in the clear. I do eat ridiculous amounts of it, but I think TJ’s brand is ok!

    YIKES! My mom just informed me of this last night, but I also saw it on Lindsay (love of oats)’s blog….my mom literally goes, OH NO! your precious peanut butter what are you going to do? Ha i should read about it more but it’s nice to know we probably don’t need to worry

    oh yeah, and i meant to add, that i remember when that same threat happened w/ peter pan pb…i had one of hte tainted jars and it was half gone by the time i found out! but i was fine…so i finished it off. :D

    I’ve read about the PB scare…that is why everyone should eat almond butter. :)

    Brilliant wrap at lunch. My gosh, that looked so good and creamy. I loved all the green/yellow action on your plate. So healthy!

    I need to try a pistaschio flavored larabar, they are my favorite nuts!
    I haven’t seen the spinach flatouts by me yet but I’ll have to keep my eye out for them.

    Good for you for throwing the bar away if you didn’t like it. I tried the PB cookie kind today and found it dry and not that tasty but can’t bring myself to throw away healthy, nutritious food!…so I ate it anyways

    I bought the spinach flat outs and love them! yesterday I put one under the broiler for a bit and broke it up once it was crispy to dip in hummus…..mmmmmm ;)

    I have been following the PB issue! Just crazy! Who knew!
